Eileen Knudtson

Eileen Louise (Huber) Knudtson, age 55, of Cannon Falls passed away tragically on Wednesday, February 17, 2010. Eileen was born on August 18, 1954 in St. Paul to Carol and Mortimer Huber. She graduated in 1972 from White Bear Lake High School. In 1971 she married Mark Knudtson and after several moves, settled in Austin, Minnesota. After her divorce she worked as a paralegal in Albert Lea before marrying Thomas Aaby and moving to Cannon Falls in 1984.

Eileen, who was highly gifted intellectually, possessed many skills in the legal and business worlds and was a successful businesswoman and entrepreneur. She was part-owner of several nightclubs including Class Act in Cannon Falls. She always treated her employees and all others she came in contact with kindness and compassion.

She will be forever mourned by her companion and soul-mate of 20 years, Richard "Jake" Jacobson of Cannon Falls. Eileen had a special relationship with daughter Carianne (Daryl) Roschen of Red Wing as they were constantly together on personal and business missions. She is also survived by sons Christopher Knudtson of Red Wing and Michael Aaby of Minnesota, and his two daughters. Her little dog, Sunshine, was a constant joy for Eileen.

The world will be a sadder and lonelier place without Eileen who was generous and giving in so many ways. Her favorite causes included the protection of animals, the environment, and the needs of less fortunate people.

Eileen is also survived by three granddaughters, Alivia, Kasie, and Maryssa as well as a grandson, Christopher. Other special people in her life include son-in-law Daryl, daughter-in-law Shannen and brother, Joe. Eileen lovingly took care of the needs of her sister, Victoria.

A celebration of Eileen's life will be held at the Mahn Family Funeral Home, Bodelson-Mahn Chapel in Red Wing on Sunday, February 28 at 2 p.m. all those who know Eileen are invited.
