Carol Jean Rubin was born on March 25, 1951 in Pine Island, MN to Raymond and Julia (Nee Barthelomew) Rubin. Carol grew up in Pine Island, MN and on February 10, 1975 married Stanley Jackson in Sioux Falls, South Dakota. They made their home in Zumbrota. Carol worked at the Coffee Mill Restaurant and then Walmart North in Rochester for almost 15 years, when she decided it was finally time to retire. Carol enjoyed traveling with her late mother-in-law Verna Jackson. She also enjoyed bingo, Treasure Island slots, Walmart and spending time with family, especially grandchildren and great-grandchildren. Carol was also well known for her macaroni salad.
Carol is survived by her husband, Stanley; daughters, Shawn (Mike) Nobel of Rochester,Tina (Tim) Hunsucker of Zumbrota, Paula (Akeem) Jackson-Aderogba of Rochester, son Stanley Jackson Jr. of Plymouth; grandchildren, Chris Nobel of Dodge Center, Ashley Hart of Rochester, Aaron ( Anna ) Groth of Leavenworth, KS. Tony Smith of Rochester, Brandy Smith (friend Lane Schlobohm) of Dover, Nicole Groth (fiance DylanSeifert) of Kenyon, Angela Dhaliwal (friend Erik Flodman) of Utah, and Gabe Hunsucker; great-grandchildren, Brody, Emmett, Cash and Lincoln; her sister Erma (Dale) Horseman of Rochester, brother Robert (Sue) Rubin of Stewartville.
Carol was preceded in death by her parents, Raymond and Julia; brothers, Herman, Charlie and Leo Rubin and sister, Virginia Jackson.
The memorial service will be held Friday, September 13 at 11 a.m., at Our Saviour's Lutheran Church in Zumbrota, with Pastor Eric Westlake officiating. Visitation will be Thursday, September 12 from 4 to 7p.m. at Mahn Family Funeral Home-Larson Chapel in Zumbrota, and one hour prior to the service at the church.
